Sweet Potato Shepards Pie

Looking for a new take on an old favorite?! Check out this Sweet Potato Shepards Pie featuring Sweet Potato Pomodoro sauce brought to us by White Kitchen Red Wine.

ingredients

  • 1 jar Just Like Home Kitchen Recipes Sweet Potato Pomodoro Sauce
  • 1 lb ground beef
  • 1 cup peas
  • 1 cup corn
  • ½ a yellow onion, diced
  • 1 tablespoon olive oil
  • 3 sweet potatoes, peeled
  • 1 tablespoon salt
  • ½ tablespoon pepper
  • 2 tablespoons butter
  • ¼ cup heavy cream
  • ¼ cup sharp cheddar
  • Fresh thyme for garnish

instructions

  1. Chop the sweet potatoes into 1 inch cubes and place into a large pot.
  2. Cover with water and season the water with the salt.
  3. Bring to a boil and then reduce heat & simmer until potatoes are tender, about 15 minutes.
  4. Meanwhile in a saucepan begin to brown the ground beef. Cook until no longer pink.
  5. Drain the fat from the pan and set the ground beef aside on a plate.
  6. In the same pan heat 1 tablespoon olive oil and sauté the onion for 3 minutes then add back in the meat, peas, and corn. Season with salt and pepper to taste.
  7. Stir in ½ of the jar of Sweet Potato Pomodoro and pour mixture into a 9×9 baking dish.
  8. The potatoes should be done, so drain the water and using a potato masher, begin to mash the potatoes.
  9. When smooth, stir in butter and the other ½ jar of Sweet Potato Pomodoro sauce. Season with additional salt to taste.
  10. Top the ground beef mixture in the baking dish with the sweet potato mixture then sprinkle with cheese.
  11. Place into an oven at 425 for 10-15 minutes until the top is lightly browned and cheese is melted.
  12. Garnish with fresh thyme and enjoy!
