Punahele Sweet Potato Pomodoro Pizza

Punahele is the Hawaiian word for “favorite”. The fresh pineapple on this pizza is the perfect complement to Mary’s Sweet Potato Pomodoro Sauce beneath, making it a definite favorite in Mary’s house!

ingredients

2 teaspoons olive oil
1 (13.8 oz.) can refrigerated pizza dough, rolled to a 12-inch circle
1 cup Just Like Home Sweet Potato Pomodoro Sauce
1 (8 oz.) log sliced fresh mozzarella cheese, slices cut in half
1/3 cup red bell pepper matchsticks
1/3 cup green bell pepper matchsticks
1/3 cup yellow bell pepper matchsticks
½ of a medium purple onion, thinly sliced, separated into rings, and rings cut in half
1 cup fresh pineapple, cut into ½-inch dice and drained
1 ½ teaspoons parsley flakes

instructions

Heat oven to 400 degrees. Brush olive oil over a 14-inch pizza pan. Place crust on pan and bake for 8 minutes. Spread partially baked crust with sweet potato pomodoro sauce then top evenly with cheese, bell pepper matchsticks, and onion. Bake for 10 minutes. Top evenly with pineapple. Bake for 12-15 minutes more until edge of crust is brown. Remove from oven and sprinkle with parsley flakes. Cut into wedges to serve. Serves 6.
***For a kick of heat, sprinkle with ½ teaspoon crushed red pepper after baking.
