Lightened up Chicken Parmesan

Are you hosting a gathering or have tiny hands to feed? We partnered with Sara Ayesh at White Kitchen Red Wine to create a more fun and festive chicken parmesan featuring our Just Like Home Buttery Marinara pasta sauce. This crowd favorite is topped with melty cheese and wrapped with delicious Italian herbed slider buns.

ingredients

  • 2 chicken breasts
  • 2 c. Just Like Home Buttery Marinara pasta sauce
  • 8 oz mozzarella slices
  • 2 oz shredded parmesan cheese
  • 6-8 slider buns brioche or sweet rolls
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 tbsp. garlic powder
  • 1 tbsp. Italian seasoning
  • extra Buttery Marinara for dipping

instructions

  1. Pre heat your oven to 375 degrees.
  2. Butterfly chicken breasts (cut them in half lengthwise)
  3. Cut 4 chicken breast halves in half to create 8 small chicken pieces. About 3-4 inches each.
  4. In a baking dish layer 1 c. of the Buttery Marinara sauce in the bottom.
  5. Place the chicken pieces on top and season with salt, pepper, and garlic powder and parmesan cheese.
  6. Pour the additional 1 c. of sauce over the chicken.
  7. Place the 8 slices of mozzarella over the top and bake for 45 minutes.
  8. Remove when done and set aside.
  9. Take the slider buns and brush each one with a small amount of butter and sprinkle Italian seasoning on top.
  10. Pop those in the already warm oven on a baking sheet for about 3-4 minutes.
  11. When the buns are warmed up, remove the top and using a spatula or tongs, remove one chicken serving from the dish (be sure to get the cheese too!) and place it on the bun.
  12. Repeat with the remaining buns.
  13. Dip in extra marinara and enjoy!
