Garlic Shrimp and Spaghetti Squash

We partnered with Sara Ayesh at White Kitchen Red Wine to create an unforgettable and easy summer meal. Sara used the N.Y. Lip-Smackin’ Garlic flavor to simmer shrimp to tender perfection and toss them with lean, low-carb spaghetti squash noodles. Whether you’re looking for a change to your weeknight routine or something fun to share with friends and family over a glass of wine, this recipe will surely delight your tastebuds.

ingredients

  • 1 pound of shrimp, peeled and deveined
  • 1 large spaghetti squash
  • 2 tbs olive oil
  • 3 c. of spinach
  • 2 c. of Just Like Home N.Y. Lip-Smackin’ Garlic marinara sauce
  • 3 cloves of garlic
  • Juice of 1 lemon
  • 1 tsp. salt
  • ½ tsp. pepper
  • ½ tsp. red pepper flakes
  • Optional topping: parmesan cheese

instructions

  1. Preheat the oven to 400 degrees.
  2. Cut the spaghetti squash in half and scoop out the seeds.
  3. Drizzle olive oil over the squash and sprinkle with salt and pepper.
  4. Roast for 45 minutes until the squash is fully cooked. Set aside when done.
  5. In a large skillet, heat up a tablespoon of olive oil and sear the shrimp for 1-2 minutes on each side.
  6. Add the garlic, lemon juice, salt, pepper, red pepper flakes, and the Just Like Home N.Y. Lip-Smackin’ Garlic marinara sauce.
  7. Simmer the shrimp for 2-3 minutes.
  8. Scoop out the flesh of the spaghetti squash and add it to the skillet. Toss well.
  9. Top with shaved parmesan cheese and fresh basil!
  10. For serving add it back into the shell of the spaghetti squash for a beautiful presentation.
