Sweet Potato Shepards Pie

ingredients
- 1 jar Just Like Home Kitchen Recipes Sweet Potato Pomodoro Sauce
- 1 lb ground beef
- 1 cup peas
- 1 cup corn
- ½ a yellow onion, diced
- 1 tablespoon olive oil
- 3 sweet potatoes, peeled
- 1 tablespoon salt
- ½ tablespoon pepper
- 2 tablespoons butter
- ¼ cup heavy cream
- ¼ cup sharp cheddar
- Fresh thyme for garnish
instructions
- Chop the sweet potatoes into 1 inch cubes and place into a large pot.
- Cover with water and season the water with the salt.
- Bring to a boil and then reduce heat & simmer until potatoes are tender, about 15 minutes.
- Meanwhile in a saucepan begin to brown the ground beef. Cook until no longer pink.
- Drain the fat from the pan and set the ground beef aside on a plate.
- In the same pan heat 1 tablespoon olive oil and sauté the onion for 3 minutes then add back in the meat, peas, and corn. Season with salt and pepper to taste.
- Stir in ½ of the jar of Sweet Potato Pomodoro and pour mixture into a 9×9 baking dish.
- The potatoes should be done, so drain the water and using a potato masher, begin to mash the potatoes.
- When smooth, stir in butter and the other ½ jar of Sweet Potato Pomodoro sauce. Season with additional salt to taste.
- Top the ground beef mixture in the baking dish with the sweet potato mixture then sprinkle with cheese.
- Place into an oven at 425 for 10-15 minutes until the top is lightly browned and cheese is melted.
- Garnish with fresh thyme and enjoy!
