Portobello Mushroom Pizza

ingredients

– 4 portobello mushrooms gills and stems removed
– 2 tablespoons olive oil plus more for coating a baking sheet
– 1/4 cup Just Like Home Kitchen Recipes Mushroom Cabernet pasta sauce
– 1/4 cup Mozzarella cheese, shredded
– 4-6 grape tomatoes, sliced
– 1 teaspoon Italian seasoning
– approx 20 small pepperonis (omit to keep vegetarian)
– fresh basil, to garnish (optional)

instructions

1. Preheat oven to broil on high heat.
2. Brush the bottoms of each mushroom with olive oil and place each mushroom, oil side down, on a lightly greased baking sheet.
3. Fill each mushroom with 2 tablespoons of the Mushroom Cabernet sauce, 2-3 tablespoons of mozzarella cheese, 5 mini pepperonis, if using, and tomato slices. Broil until cheese has melted and is golden in color (about 8ish minutes). Top with Italian seasoning and fresh basil, if desired. Then dig in!

To serve, sprinkle with the remaining Italian seasoning (or mixed herbs), and season with salt and pepper to taste.
