Chicken Pepperoni Pizza Casse’rolls

INGREDIENTS:

  • 6 tbsp. Just Like Home Kitchen Recipes® N.Y. Lip-Smackin’ Garlic pasta sauce
  • 16 small pepperoni rounds
  • 4 potato rolls
  • 4 deli chicken tenders, about ¾ lb. (deli or if you can’t find them you can use frozen cooked) chopped into bite size chunks
  • 4 slices mozzarella cheese
  • 2 tbsp. melted butter
  • 1/4 tsp. Parmesan cheese
  • 1/8 tsp. garlic powder
  • 1/8 tsp. oregano
  • Pinch of crushed red pepper flake

DIRECTIONS:

  • Preheat oven to 350 degrees.
  • Place pepperoni in a pan and let cook for a few minutes, just long enough to render out the fat, and it to start to crisp up. Remove and place on a paper towel lined plate.
  • Place the bottoms of each potato roll in and 8 x 8 baking dish.
  • Top each roll bottom with a chopped chicken tender, 1 ½ tbsp. of Just Like Home Kitchen Recipes® N.Y. Lip-Smackin’ Garlic pasta sauce, and a slice of mozzarella.
  • Place roll tops on.
  • In a small bowl, combine melted butter and the remaining ingredients.
  • Drizzle mixture over rolls.
  • Cover with foil and bake 20-25 minutes.
