We partnered with Sara Ayesh at White Kitchen Red Wine to create an unforgettable and easy summer meal. Sara used the N.Y. Lip-Smackin’ Garlic flavor to simmer shrimp to tender perfection and toss them with lean, low-carb spaghetti squash noodles. Whether you’re looking for a change to your weeknight routine or something fun to share with friends and family over a glass of wine, this recipe will surely delight your tastebuds.
ingredients
- 1 pound of shrimp, peeled and deveined
- 1 large spaghetti squash
- 2 tbs olive oil
- 3 c. of spinach
- 2 c. of Just Like Home N.Y. Lip-Smackin’ Garlic marinara sauce
- 3 cloves of garlic
- Juice of 1 lemon
- 1 tsp. salt
- ½ tsp. pepper
- ½ tsp. red pepper flakes
- Optional topping: parmesan cheese
instructions
- Preheat the oven to 400 degrees.
- Cut the spaghetti squash in half and scoop out the seeds.
- Drizzle olive oil over the squash and sprinkle with salt and pepper.
- Roast for 45 minutes until the squash is fully cooked. Set aside when done.
- In a large skillet, heat up a tablespoon of olive oil and sear the shrimp for 1-2 minutes on each side.
- Add the garlic, lemon juice, salt, pepper, red pepper flakes, and the Just Like Home N.Y. Lip-Smackin’ Garlic marinara sauce.
- Simmer the shrimp for 2-3 minutes.
- Scoop out the flesh of the spaghetti squash and add it to the skillet. Toss well.
- Top with shaved parmesan cheese and fresh basil!
- For serving add it back into the shell of the spaghetti squash for a beautiful presentation.
